Description
Seeking an experienced and passionate Arabic Grill Chef to join our team in Riyadh. The ideal candidate will be a specialist in preparing and cooking a wide array of authentic Middle Eastern grilled items, including various kinds of kebabs, shish tawook, kofta, and other traditional grilled meats and poultry. You will be responsible for maintaining the highest standards of quality, flavor, and hygiene on the grill section.
Key Responsibilities
Grill Operations: Expertly prepare, marinate, and grill all menu items including lamb, beef, chicken, and seafood, ensuring perfect cooking temperature and consistency.
Preparation: Oversee the daily preparation (mise en place) for the grill station, including cutting, trimming, portioning, and storage of all meat and poultry.
Quality Control: Maintain the authentic flavor profiles of all Arabic grilled dishes, ensuring all food meets the restaurant's high standards before plating.
Hygiene & Safety: Ensure the grill and work area are impeccably clean and organized, strictly adhering to all local Saudi Food and Drug Authority (SFDA) and HACCP food safety standards.
Stock Management: Monitor inventory for the grill station, report needs, and minimize waste through proper handling and rotation.
Qualifications & Skills
Minimum of [3-5] years of professional experience as a Grill Chef or Chef de Partie, specifically within an Arabic or Levantine restaurant environment.
Demonstrable expertise in various Arabic marinades and grilling techniques (charcoal, wood, gas).
Strong knowledge of meat cuts and portion control.
Ability to work efficiently under pressure during peak service hours.
High standards of personal hygiene and food safety knowledge.
