Description
Layers is Bahrain’s destination for artisanal viennoiserie and elegant desserts. As we expand our brunch-forward bakery-restaurant, we’re searching for a Pastry Maker who masters classic French techniques and isn’t afraid to infuse them with the bold flavours of the Middle East—think pistachio-rose croissants, saffron mille-feuille, and date-caramel Paris-Brest.
What You’ll Do
• Daily production of laminated viennoiserie (croissants, brioches, kouign-amann), petits gâteaux, choux, entremets, and tea-time cakes—all 100 % from scratch.
• Lamination, tempering & glazing: execute perfect layers, mirror glazes, mousselines, and silky ganaches.
• Middle-Eastern flavour R&D: develop limited-edition items using pistachio, halva, cardamom, rose, orange-blossom, tahini, dates, saffron, za’atar, etc.
• Consistency & hygiene: follow our HACCP-certified SOPs, maintain meticulous records, and guide junior bakers.
• Cross-team collaboration: sync with bread, gelato, and savoury stations to deliver seamless brunch service.
Minimum requirements
• 3 + years in a professional pâtisserie or artisan bakery.
• Solid understanding of ingredient functionality and shelf-life in a warm-climate market.
• Early-morning availability and weekend/holiday flexibility.
