Description
We are looking for a highly skilled and motivated Sous Chef to join our culinary team. The ideal candidate will have a deep understanding of Chinese cuisine, strong leadership abilities, and a passion for excellence in the kitchen. As the Sous Chef, you will work closely with the Executive Chef to oversee kitchen operations, ensuring that all dishes are prepared to the highest standards of quality and consistency.
Key Responsibilities:
Kitchen Leadership:
Assist the Executive Chef in managing day-to-day kitchen operations, including food preparation, cooking, and plating.
Supervise and mentor kitchen staff, providing guidance and training to ensure high performance and adherence to restaurant standards.
Lead the kitchen team during service, ensuring all dishes are prepared and presented on time and according to the restaurant's specifications.
Menu Development:
Collaborate with the Executive Chef in creating and refining menu items, incorporating seasonal ingredients and innovative techniques.
Contribute to the development of new dishes that align with the restaurant’s vision of blending traditional and modern Chinese cuisine.
Ensure all menu items are prepared consistently, following standardized recipes and presentation guidelines.
Quality Control:
Maintain the highest standards of food quality, taste, and presentation, conducting regular checks during service.
Oversee portion control, minimizing waste while ensuring customer satisfaction.
Monitor food safety and sanitation practices, ensuring the kitchen meets all health and safety regulations.
Inventory and Cost Management:
Assist in managing inventory, including ordering and receiving supplies, and conducting regular stock checks.
Work with the Executive Chef to control food costs by optimizing inventory use, reducing waste, and managing portion sizes.
Participate in budgeting and cost analysis to ensure profitability while maintaining the restaurant's high standards.
Team Collaboration:
Foster a positive and collaborative working environment, encouraging teamwork and open communication.
Act as a liaison between kitchen staff and front-of-house staff, ensuring smooth communication and coordination during service.
Step in to perform any kitchen duties as needed, including cooking, plating, or assisting with special events.
Qualifications:
Proven experience as a Sous Chef, preferably in a high-end Chinese or Asian restaurant.
Extensive knowledge of Chinese cuisine, including regional specialties and modern culinary trends.
Strong leadership skills with the ability to manage and inspire a team.
Excellent cooking skills, with a focus on precision, consistency, and creativity.
Solid understanding of kitchen operations, including inventory management, cost control, and food safety standards.
Ability to work efficiently under pressure in a fast-paced environment.
Strong communication and interpersonal skills, with the ability to work collaboratively with the kitchen and front-of-house teams.
Culinary degree or equivalent professional experience is preferred.
Fluency in English; knowledge of Mandarin or Cantonese is a plus.
